Gai sabb - Fried chicken salad

If you get a salad with meat in the "west", it is usually loads of vegetables just topped with a few bits of meat. In Thai salads it is the other way. Meat is the main ingredient and vegetable plays a supporting role. In spite of the loads of meat, this salad is very refreshing and suitable for summer heats too.


If you can`t buy roasted glutinous rice powder (it is more coarse than flour), you can make it easily yourself. In Thai cuisine it is used quite a lot, so just make much more than you need for the salad, that you can use it later too. It brings nice crunchy consistency to the dishes. 

First roast dry (uncooked) glutinous rice on a dry pan on a low heat for about 15 minutes until it gets golden color and starts releasing popcorn like scent. Stir constantly. Remove from stove. Let it cool down and pound in a mortar for a coarse powder or blend in a blender.

Mix fish sauce, meat stock powder, egg and sugar and mix properly. Add flour in such an amount to create a batter which is thick but still a bit runny. Process or blend into a very smooth one. Let it rest for about 10 minutes.

Heat up oil in a wok on a very high temperature.

Dip mushrooms in the butter. And deepry in the oil till golden brown. Then strain and set aside.

Crush chilies, garlic, salt, MSG, sugar and rice powder in a mortar. Add a lime juice and fish sauce and pound just slightly to mix all the flavours.

Mix together scallion, cilantro, tomatoes, onion, chicken meat and pour in the dressing.

Mix again and serve with rice.

For 4 portions:

For fried chicken bits:

  • 4 chicken breasts without skin sliced on one bite pieces
  • fine flour
  • 4 tbs fish sauce
  • 1-2 eggs
  • 1 tsp sugar
  • pinch of meat stock powder
  • oil for deepfrying

For the salad:

  • 2-4 red chilies
  • 5 cloves garlic
  • 1/2 tsp MSG (optional)
  • 5 tsp sugar
  • 1 tsp salt
  • 4 scallions sliced or cut on 2-3 cm pieces
  • 1 small onion sliced on strings
  • 2 tomatoes halved and sliced
  • 3-4 tbs fish sauce
  • 2 tsp glutinous rice powder
  • handful cilantro chopped
  • juice from 2-3 limes

Side dish:

  • rice
