Lime is a citrus fruit, similar to lemon, but smaller and less sour. It is used unripe, green. Thai and Vietnamese cuisine can not do without it. It is used in soups, sauces, vegetable salads or in mixed alcoholic and non alcoholic drinks.
When I wanted to put a yellowish lime into vegetable salad in Sri Lanka, auntie of my family simply took it and threw away. They are very particular about freshness and quality of food in Sri Lanka. When squeezing lime juice into any kind of dish, they put their hands between the lime and dish, to filter the seeds with their fingers.
