Bedum - Fried noodles with peanuts

I have always thought, eating instant curly noodles is just an instant fast food, that we buy in supermarkets and that people in Asia have no idea this kind of food even exists. In Sri Lanka I realized I was wrong. They cook with these instant noodles quite often, just different way than us. Bedum is prepared for special occasions only. New Year, Almsgiving and other holidays.

Process

Tear curly noodles into pan with oil and fry few minutes on a middle level of heat until they get light brown. Strain oil and use it for frying of the rest of ingredients. And dry the noodles with a paper.

Fry peanuts the same way like noodles. Strain and dry with a paper.

Fry chili flakes in the same oil for 1 minute. Strain and dry with a paper.

Cut red onions into strips, add turmeric and fry on a low heat level for about 15 minutes, until they reach crispy consistency and brown colour. Just before the end of frying add crushed garlic.

Mix all mentioned above, add salt, glutamate and lime juice and mix again. 

in Sri Lanka it is served with rice and curry, but it would serve greatly as a party nibble food too.

Ingredients

For a larger plate (like on the photograph):

  • pack of instant curly noodles
  • 2 red onions - cut into strips
  • 1 tsp turmeric
  • 2 cloves garlic - crushed
  • handful peanuts in skins
  • tbs chili flakes
  • salt
  • 1/4 tsp glutamate
  • juice from 1/2 lime
  • coconut or vegetable oil
