Aloo jeera fry - Fried potatoes with cumin

If you love fried potatoes, it is time to tune them up a bit by some great Indian spices :) Great as a side dish, but in India they serve them with rice or local bread.

Process

Heat wok with oil and deep fry potatoes till golden brown and drain.

Heat wok with 1 tbs of oil. Stir fry cumin seeds for 1 minute. Add onion, garlic and ginger and fry 1 more minute. Lower heat, add potatoes, salt, turmeric, chili powder and cumin powder. Stir all the time and after 2 minutes remove from the stove. Just before serving mix with cilantro. 

Serve with chapati, rice and other Indian dishes.

For 4 portions:

  • 4 large potatoes - boiled in skin, peeled and cut on pieces
  • 1 and 1/2 tsp cumin seeds (jeera)
  • 2 cm long piece ginger super finely chopped
  • 1 red onion cut on strings
  • 1 clove garlic super finely chopped
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • 1/2 cumin powder 
  • cilantro finely chopped
  • salt
  • oil

  • kadai pan
