Paneer and cashew nuts in a white gravy

This was simply a balsam for my soul. So fine, creamy and delicate .... And it is quite easy to make home made paneer too. Or substitute it with tofu for instance.

Process

Soak 1 handful of cashew nuts in a hot water for 30 minutes. Then strain them and blend into a smooth paste.

Heat up 1 tablespoon of oil in a pan and fry onion, in 1 minute add chili pepper, garlic and ginger and salt to taste. Put aside, let it cool and blend into a paste too.

Fry the other handful of cashew nuts together with paneer in a pan on 1 tablespoon of oil for about 2 minutes. Set aside.

Fry chili powder shortly, add cilantro, stir all the time. Add cashew paste, coriander powder and garam masala. Add the onion, ginger and garlic paste. Stir well. All this within this line takes about 2 minutes. Add a bit of water. In the end add the cream. As soon as it mixes properly with the paste add more water if necessary and stir.

Mix in cashew and paneer and warm up.

Serve with chapati, dosa or apam.

Ingredients

For 4 portions:

  • 2 handful cashew nuts
  • 400g paneer diced
  • 1 large red onions fine chopped
  • 1 green chili chopped
  • 1 clove garlic crushed
  • 1 cm fresh ginger crushed
  • 1/4 tsp chili powder
  • 2-3 tbs fresh cilantro chopped
  • 1/2 tsp coriander powder
  • 1 tsp garam masala
  • pinch of salt
  • 1/2-1 cup cream
  • 3 tbs coconut or vegetable oil

Side dish:

  • riceor Indian bread, chapati, apam, dosha .......

  • blender
  • kadai pan
  • rice cooker
