Jeera rice - Fried rice with cumin

Jeera rice is one of the most popular rice side dishes in India. It is a very nice combination of aromatic jeera (cumin), sweet raisins and crunchy cashews. All smoothened by quite loads of ghee. It is served with various kinds of North Indian curries, dhals and other dishes.

Process

Heat up ghee in kadai pan, add cumin seeds. As soon as they start fizzing and releasing their aroma, add cashews, raisins and onion. Fry on a high heat and stir constantly. In one minute add cooked rice and salt to taste. Fry and stir constantly 1 minute. Stir in cilantro and serve in about 5 seconds.

Serve as a side dish with various kinds of North Indian curries and dhals.

Ingredients

For 4 portions:

  • 8 tbs ghee (clarified butter) or butter
  • 2 tsp cumin seeds
  • 1 small red onion cut on thin strings
  • 1 handful cashew nuts
  • 1 handful fresh cilantro chopped
  • 1/2 handful raisins 
  • cooked basmati rice, ideally 1 day old
  • salt
