Gobi - Cauliflower without onion and garlic

There are recipes in Indian cuisine, where you will find no onion and garlic, which are ingredients used very often otherwise. One of the reasons is, that garlic and onion are considered as medicine and thats why they should be used moderately. Very easy and tasty recipe from North India.

Process

Steam cauliflower 10 minutes.

Heat up oil on a pan, add cumin seeds. As soon as it starts whispering, add chili powder. In 1 minute add ginger, turmeric and cauliflower. Mix well. In 1 more minute lower the heat and add coriander powder, garam masala, salt, 2-3 tbs water, mix and cover.

Cook 3-5 minutes. Just before the end add fenugreek leaves. Cauliflower should be soft, but still a bit crunchy.

Serve with rice, chapadi, paratha ...... and some kind of chutney, for instance green mango one.

Ingredients

Na 4 porce: 

  • 1 cauliflower, torn on tiny florets
  • 1 cm ginger crushed
  • 1/2 tsp jeera cumin
  • 1/2 tsp turmeric
  • 2 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 tsp chili powder
  • 1 tsp dried fenugreek leaves (optional)
  • salt
  • 2 tbs oil

Side dish: 

  • rice, chapati, paratha, dosa ......

  • kadai pan
  • rice cooker
