Chicken curry

It was a nice change to have a bit of a meat in India. Very interesting part was buying the chicken already. It was as fresh as it gets. Traditionally there are no fridges in India`s meat shops. There are live chicken instead running around and got "ready" only when a customer comes and buy one or two.

Process

Heat up oil in a pan on a high heat. Fry shortly garlic, ginger and curry leaves. Stir constantly.

Add onion, turmeric and green chilies.

In about one minute add chicken pieces, salt and garam masala. Fry chicken meat from both side, 2-3 minutes each. 

Lower the heat, add tomatoes, cilantro, chili powder and coriander powder. Stir well, cover and simmer 20-25 minutes. 

Serve with rice.

Ingredients

For 4 portions:

  • 1/2 chicken cut on pieces
  • 2 tomatoes chopped
  • 2 tsp meat curry mix
  • pinch of salt
  • 10 curry leaves
  • 2 red onions chopped
  • 5 cloves garlic crushed
  • 2-3 cm fresh ginger crushed
  • 1 tsp chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 handful cilantro chopped
  • vegetable oil

Side dish:

  • rice
