Maldive fish - Umbalakada

It is a boiled, smoked and sun dried fish from Maldives. Usually it is tuna. It is used in Sri Lankan or Maldive cuisine to provide the dish with it its specific flavor and proteins.

The fish is gutted and boneless. And hard nearly like a stone and tastes like a dry beef. All the recipes where it was used, it was in a very small amount. If you do not have it, just skip it.

It is called Umbalakada in Sri Lanka.
