Rice porridge with anchovies

Hurrayyy, next time, when I have some rice leftovers, I can do something else than risotto or a fried rice ..... these were my thoughts when I was enjoying my first meal on my arrival to Malaysia, rice porridge. It can be called both porridge and soup, depending how watery it is. You can garnish it nearly with anything and It is a great soup for hangover too.


Put steamed rice into a pot and pour in meath broth, just as much that the rice is submerged. Bring to a boil and simmer 10-15 minutes until the water gets thicker and rice starts nearly melting on your tongue. Stir frequently. According to your preferences add more water or a meat broth if you want it more watery.

Mix eggs in a bowl and pour into the rice. Mix well and simmer one more minute.

Pour into bowls and garnish with the ingredients mentioned or just some of them or with anything else ;)

  • 4 portions of steamed rice
  • 3 raw eggs
  • chicken broth

To garnish:

  • fried dried anchovies
  • spring onion
  • fried onions
  • sesame oil 
  • light soy sauce
