Banana ice cream with cinnamon and cardamon

I was sitting in the garden of a small local house in Indian Kerala. It was completely dark outside. Just coconut leaves were whispering on the palm trees above my head. There was a (truly) happy cow eating grass just right behind me and all of a sudden the owner of the house came and brought me this delicious refreshing desert after amazing dinner.

Process

Put milk (or milk with cream) into freezer. Ideally into ice cube molds or trays, that it is easier then to blend the frozen milk. When it is frozen, we can start.

Put cardamon pods into a mortar and crush just a very little bit, that the pods open. Pour out the seeds and crush into a powder. Keep the skins for chicken curry for instance.

Put banana, cardamon powder, cinnamon powder and cocoa powder into a blender and blend. Mix with the frozen milk cubes and blend again. The created mix is probably a bit more melted than required. If so, then put the mix into a freezer for a short time, just that the ice cream reaches the required consistency for nice ice cream scoops.

For 2 portions:

  • 1 large very ripe banana
  • 0,2 dcl full fat milk (or cream : milk 50:50)
  • 4 green cardamon pods
  • pinch of cinnamon powder
  • 1 tsp cocoa powder
  • 1 tsp sugar
